Foodie Friday: Pico de Gallo Salsa

I usually don’t post two recipes a week but since I missed the Meatless Monday link up I figured I’d join Foodie Friday

Today’s recipe is a staple in Mexican food and it was one of the things I first learned how to make, well, the only salsa I ever make. It super simple to make to it gives so much flavor to your food.

1 bunch cilantro, chopped

1 roasted Poblano pepper(or raw, chopped jalapeño)

1 large tomato or a handful or cherry tomatoes

1/4 white onion chopped or 2-3 scallions chopped

Juice of 1/2 lime

Directions: Mix and ingredients and season to taste with salt and pepper.

So simple right?

I choose to use Poblano peppers because they are less spicy than jalapeños and have lots of flavor when you roast them. Sometimes they can be hard to find though so if you can’t find Poblanos, or as they are sometimes labeled Pastilla Peppers, feel free to use jalapeños.

Come back on Monday to see how I use my Pico de Gallo salsa!

  1. Yum, this sounds delicious! I’ve never tried making pico de gallo with roasted poblanos. That sounds like a great idea! I’ll have to try that next time.

  2. Hi Ellie! I found your blog from Foodie Friday linkup. I love the sound of the poblano pepper in this salsa. 🙂 I actually just made recipe using those too and had never previously used them.

If you ever want another place to share your tasty recipes I co-host a vegan linkup every Friday called Healthy Vegan Fridays. We’d love for you to join us!
