Foodie Friday: Pico de Gallo Salsa

I usually don’t post two recipes a week but since I missed the Meatless Monday link up I figured I’d join Foodie Friday

Today’s recipe is a staple in Mexican food and it was one of the things I first learned how to make, well, the only salsa I ever make. It super simple to make to it gives so much flavor to your food.

Ingredients:

1 bunch cilantro, chopped

1 roasted Poblano pepper(or raw, chopped jalapeño)

1 large tomato or a handful or cherry tomatoes

1/4 white onion chopped or 2-3 scallions chopped

Juice of 1/2 lime

Directions: Mix and ingredients and season to taste with salt and pepper.

So simple right?


I choose to use Poblano peppers because they are less spicy than jalapeños and have lots of flavor when you roast them. Sometimes they can be hard to find though so if you can’t find Poblanos, or as they are sometimes labeled Pastilla Peppers, feel free to use jalapeños.

  1. Yum, this sounds delicious! I’ve never tried making pico de gallo with roasted poblanos. That sounds like a great idea! I’ll have to try that next time.
